fruit topping cake
This delicious Carrot-Bundt. Fruit Cake is made with healthy snacks for you in mind. Cakes, most of this type will have on the oil cup. This cake has four. Carrot cake – fruit BUNDT.
3 cups all purpose flour.
2 tsp baking powder.
1 1 / 2 tsp baking. Soda.
1 1 / 2 teaspoon ground cinnamon.
1 / 2 tsp salt.
1 / 2 cup dried apricots,. finely diced.
1 / 2 cup dried currants.
1 / 4 cup minced crystallized ginger.
1 cup granulated sugar.
1 cup firmly packed brown.
2 large eggs.
2 large egg whites.
1 cup Applesauce.
1 / 4 cup canola oil.
4 cups shredded carrots.
1 tablespoon vanilla extract.
Preheat oven to. 350 degrees. Grease and flour 12 bundt cup pan; Together.
In large mixing bowl and flour,. Baking powder, soda baked, cinnamon, and salt; Together.
In a small bowl, 2 tbsp of each. apricots and 1 tablespoon of currants.
And apricots. Remaining currants and ginger to flour mixture.
In another large bowl together granulated sugar,. Sugar, eggs, egg whites, applesauce, canola oil. carrots and vanilla. stir well with spoon to break back. any clumps of sugar. stir sugar mixture into the flour mixture. Pour batter into prepared bundt pan.
Bake at 350 degrees 1 hour and up to 15. 20 minutes until wooden toothpick into center of cake comes out clean. The cake cool in pan on rack line. 10 min. Turn the pan upside down and turned the cake cool on a rack close wire.
It is:.
1 can (6 oz). Pineapple juice.
1 / 2 cup fresh orange juice.
2 tbsp honey.
2 tbsp. toasted chopped pecans.
While cake is cooling included. juices and honey in medium saucepan. Bring mixture to boil. Reduce heat to low and gently boil. 12-15 minutes until glaze has thickened and reduced to about one-third of the cup. Erin is it a small bowl and cool. 15 min. One reserved (from cake recipe) apricots and. currants in it is mixed. spoon glaze over cake, then press the cold. sticks to cake. sprinkle pecans over top of cake to install a light press.
